Hi! My name is Kim.
Our story starts back in Southern California in 1976 when I met a tall, handsome and very nice Pennsylvania boy. I was smitten from the start! I was not a full-time vegetarian, but I quickly found out that Don was and had always been. Shortly into our new relationship, I realized that this was something special and to be fully compatible, I needed to make a commitment to a complete vegetarian lifestyle. This began my quest to become the best vegetarian cook that I could be for my potential new husband and family to come. And so, over the last 38 years, with the help of my mother and mother-in-law, both my grandmothers, and many friends and other family members I have gleaned much and learned how much fun and satisfying vegetarian cooking can be.
Over the years, I have absolutely loved feeding my husband and three sons as I became their 'chief cook and bottle washer!' I learned the joys of feeling good about not only feeding my family healthy food, but also hearing the men in my life refer to me as their favorite cook in the world. I'm sure I'm not the best in the world, but it is one of the joys of my life to hear those that I care most about refer to me in that way.
Vegetarian cooking can be intimidating to some, as it was initially to me. As a busy wife and mother, I have tried over the years to make it simple to meet the demands of today's busy lifestyles. I have also learned the benefits of creating meals and recipes that meet many health benefits such as vegan, organic, gluten-free, etc.
It is with this in mind that my husband, that Pennsylvania boy, who has spent many years in the corporate food world, urged me to share with others what he has experienced in my cooking and develop "Kim's Simple Meals". Although I feel I am just a simple wife and mother, and now new grandmother, I am excited to share with you some of my experiences in the kitchen.
