Kim’s Simple Meals can be prepared in a variety of ways; satisfying any combination of tastebuds! With the arrival of summer, folks are preparing picnics and enjoying days outdoors. Here’s a recipe you’ll want to make over and over again; try it this weekend for the Fourth of July!

Guacamole Burgers

Yield: 8 burgers

Guacamole

  • 4 ripe avocados
  • 2 limes, juiced
  • 2 jalapeno peppers, minced, ribs and seeds removed
  • 4 tablespoons cilantro, finely chopped
  • 4 tablespoons red onion, minced
  • 1/2 teaspoon garlic powder
  • Salt & pepper, to taste

PREPARE GUACAMOLE

  1. Cut avocados in half, remove seed, and peel. Place the avocado pulp in a medium sized bowl, and add lime juice.
  2. Mash the avocado and juice together with a fork.
  3. Add in the remaining ingredients, and mix.
  4. Season with salt and pepper to taste. Set aside.

PREPARE BURGERS

  1. Cook burgers as directed on box. But before cooking, now’s your chance to add in anything else you’re craving… Add in sautéed mushrooms and onions, a dash of barbecue sauce, or any other desired customization.

ASSEMBLE & SERVE

  1. While burgers are resting, toast hamburger buns.
  2. Place burger on bottom half of bun. Add a hefty dollop of guacamole, and then add other toppings – tomato, red onion, arugula or lettuce. Top with other half of bun.
  3. Enjoy immediately!
