INGREDIENTS:

  • 1 Box Kim’s Simple Meals – Organic Macaroni Casserole mix
  • 1 Cup Bertolli Organic Traditional Tomato & Basil Sauce pasta sauce
  • Organic Oil
  • Gluten Free Seasoned Breadcrumbs:
  • 2 teaspoons McCormick Gluten Free Thick & Zesty Spaghetti Sauce Mix
  • 2 tablespoons Bob’s Red Mill Gluten Free All Purpose Baking Flour
  • 1/2 cup Panko Gluten Free Breadcrumbs

Equipment you will need:

Presto FryDaddy Deep Fryer (Alternative to deep frying at end of instructions)
Wire Skimmer (wire or slotted frying spoon)
Deep Dish – Glass Loaf Baking Dish
2 Ounce Stainless Steel ice cream scoop with spring release

INSTRUCTIONS:

  1. Cook Kim’s Simple Meals – Macaroni Casserole: Stove Top Method
  2. Place in Deep Dish Glass Loaf Baking Dish
  3. Place in fridge for 4 hours to cool and firm up
  4. Mix your Seasoned Breadcrumbs in a shallow bowl
  5. Heat oil. Follow instructions on deep fryer. For fire safety be sure not to overfill the oil reservoir.
  6. Using the 2oz ice cream scoop, scoop the cold firm mac-n-cheese. Press firmly against the wall of the baking dish. Release into the bowl of Seasoned Breadcrumps.
  7. Pile crumbs all over Mac-n-Cheese ball covering well.
  8. Once all exposed cheese has been covered, pickup ball and form firmly in hand. Do not roll.
  9. Gently place on a baking sheet or on a plate and repeat.
  10. With a wire spoon, lower 3 Mac-n-Cheese balls into the fryer and set timer for 2 minutes.
  11. Remove Mac-n-Cheese balls from fryer and place on plate covered with a paper napkin to drain excess oil.
  12. Serve with Organic, Gluten free Bertolli’s Traditional Tomato & Basil Pasta Sauce for dipping – garnish with Basil and serve!

Alternative to deep frying:

You may pan fry or oven bake.  For best results, if you choose to oven bake,
lightly spray the coated mac-n-cheese balls with organic cooking spray for a crispy golden crust.
