Walnut Roast

Using Kim’s Simple Meals, Homestyle Burger Mix

Ingredients:

Serves 6
Prep time, 15 minutes. Bake time, 30-40 minutes.

Preheat oven to 350 degrees (if using convection, 325 degrees)
Spray or Oil an 8”x8” baking dish, set aside.

Walnut Roast

  • 1 tbs. olive oil (can use small amount of water instead of oil)
  • 1 small onion, diced
  • 1 lg. garlic clove, minced
  • 1 4 oz. can, mushrooms (can use fresh mushrooms)
  • 2 tsp. vegan beef-like seasoning
  • ¾ c. chopped walnuts
  • 1 ½ c. water
  • 1 package KSM Homestyle Burger Mix

Glaze Topping

  • 1/3 c. water
  • 1/3 c. brown sugar (can use honey, or favorite natural sweetener)
  • 1/3 c. ketchup (can use tomato paste)

Directions:

In a medium size pan, sauté onion, garlic, and mushrooms in olive oil until tender. Add gluten-free/vegan beef-like seasoning and walnuts. Stir and simmer together so flavors blend for about 1 minute. Add water to mixture and bring to a rolling boil, then add KSM Homestyle Burger Mix, and stir well. Remove from heat and pour into baking dish and smooth so top is even.

In a small bowl or measuring cup add glaze ingredients and whisk together. Pour over top of roast and spread evenly. Bake until bubbling in center then remove from oven and allow to set for 10 minutes before serving. Variation: Substitute your favorite gravy recipe in place of glaze topping.

I did not specify in the beginning, but I generally use all organic and gluten-free ingredients, whenever possible.
